Whew! Today is the first day I'm not cooking anything, since I can't remember when. Santa (lady from local dog shelter) is bringing Frank his little brother (another wienie dog) this afternoon, so I've been straightening the house and getting ready for his arrival. I'll post pics in another thread later. But onto the good stuff, I give you....

Yuletide Layer Bars

1/2C butter/marg., melted
2 1/2C graham cracker crumbs
1 1/2C chopped nuts (I suggest walnuts)
1 1/2C flaked coconut
1 3/4C chocolate chips (I buy the holiday mixed ones with the red/green swirls) I think using a mix of the chocolate and white chocolate tastes best.
14oz can sweetened condensed milk

Preheat oven to 350. Pour melted butter into 13x9 inch baking dish. Sprinkle graham cracker crumbs over butter, stir well and press into bottom of pan. Sprinkle with nuts, coconut and chocolate chips, in that order. Pour sweetened condensed milk evenly over top. Bake for 25-30 minutes or until light golden brown.

Today is a cracker spread. It's really good but I'll admit reading the ingredients may make you think twice, but I promise it works!

Pineapple Cheese Spread

2 (8oz) pkgs cream cheese, softened
1 (8 1/2 oz) can crushed pineapple, drained
1/3C chopped pecans
1/4C finely chopped green pepper
2 tbsp finely chopped green onion
1 tsp seasoned salt

Mix all ingredients together, cover and chill.

I'll give you guys a break from the holiday-ish things today. This is a great dish to bring to get togethers though....

Corn Pudding

1 can creamed corn
1 can regular corn
3 eggs
4 tbsp flour
1/2 tsp salt
6 tbsp sugar
3 tbsp melted butter
1C milk
1 tbsp vanilla

Preheat the oven to 375. Mix together all ingredients, adding the corn and milk last. Pour into a greased 8x8 baking dish. Bake for 1 hour.

We'll do a dinner tonight, how about....

Pizza Chicken Roll Ups

4 boneless skinless chicken breasts
12 slices deli pepperoni
8 slices mozzarella cheese
jar pizza or marinara sauce

Preheat oven to 350. Flatten chicken to about 1/4” thickness. Place 3 slices of pepperoni and 1 slice mozzarella evenly on top of each breast. Roll up tightly and secure with a toothpicks. Place in a greased baking dish. Spoon sauce over top. Cover and bake 35-40 minutes. Uncover; top each breast with remaining cheese and bake 5 minutes longer till cheese is melted.

I keep looking at that PIneapple Cheese spread and going hmmmmm....eeeewww?.... hmmmmm.... eeew?? ... hmmmmm... yummy???!!! Because of all the food out there, dips and spreads seem to have the greatest capacity to surprise (pleasantly, of course )

This one's kind of a cheat, since it starts with a box. It's really good though, I used to make mac n' cheese from scratch but I think this is just as good or better. I especially like the cracker topping.

Mac n’ Cheese

1 (14oz) pkg Kraft Deluxe Macaroni & Cheese dinner
1C shredded cheddar cheese, divided
1/2C sour cream
1/4 tsp (or more) cayenne pepper or chili powder
approx. 20 Ritz crackers, crumbled
1 tbsp butter, melted

Preheat oven to 375. Prepare mac & cheese dinner as directed on package. Stir in 1/2C of the shredded cheese, the sour cream and the pepper. Spoon into a lightly greased 8x8 baking dish. Sprinkle the top with the remaining cheese and the crumbled Ritz. Drizzle melted butter evenly over top. Bake 15-20 minutes.
