Gingerbread's Recipe Thread



So one of my New Year's resolutions was to spread my enthusiastic love of cooking with the TP by doing a daily recipe thread. After all they don't call me Gingerbread for nothing! I was going to wait until the new year to begin but with all the wonderful edible treats that seem to abound this time of year I just couldn't wait! I've already typed up more recipes then you can shake a wooden spoon at, so I've decided to get a jump start! Each day I will post a new recipe that I have personally tried, so you know it's worthy. Feel free to post any recipes you may like to share as well! Also, keep an eye out after Christmas for another recipe exchange. I did one a couple years ago and it was great fun. After the holidays I'll host another one and hopefully get as good of a turn out as I did before. If everyone enjoys it again, I will make it an annual event. I'm just looking to give a little back to the pony community since you're all such good friends and cooking is what I do best, so I hope you all enjoy!

Fruit Cake Cookies
I personally hate fruitcake, but I love these cookies! They have a light flavor and usually a good crunchy consistency; it’s all I can do to keep my husband from eating them all!

1C butter, softened (no substitutes)
1 1/2C sugar
2 eggs
2 1/2 C all-purpose flour
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp salt
2C chopped pecans
8oz pkg chopped dates
8oz pkg candied cherries, halved
8oz pkg candied pineapple, diced

Preheat oven to 325. Cream butter and sugar in mixing bowl. Add eggs, mix well. Combine flour, baking soda, cinnamon and salt. Add to cream mixture and mix well. Fold in pecans, dates and fruits. Drop by rounded teaspoons onto greased baking sheets or a baking stone (I personally love baking stones and don’t even own a cookie sheet anymore). Bake for about 14 minutes or until lightly browned. Cool on wire racks.

Honey Nut Chess Bars

I made these one year, and everyone liked them. Even the school bus driver asked for the recipe (so his wife could make them, of course lol) They're easy to make.

Here's the link so you can see a pic, but I'm going to paste the recipe here in case LoL (Butter, not the laugh hehe) removes the recipe at some point in time. Oh, and they have an *extensive* ingredient substitution page that you can access at the bottom of the recipe.

ENJOY!

Land O'Lakes: Butter, Cheese, Dairy and Deli Products


Preparation time: 15 min Baking time: 40 min
Yield: 36 bars

Crust Ingredients:

1 3/4 cups all-purpose flour
1/2 cup sugar
2/3 cup LAND O LAKES® Butter, softened
1/3 cup chopped pecans

Filling Ingredients:

1 1/4 cup firmly packed brown sugar
2/3 cup chopped pecans
2/3 cup LAND O LAKES® Butter, melted
3 eggs
3 tablespoons honey

Decoration Ingredients:

Powdered sugar, if desired


Heat oven to 350°F. Combine flour, sugar and 2/3 cup butter in large bowl. Beat at low speed, scraping bowl often, until mixture resembles coarse crumbs. Stir in 1/3 cup pecans by hand. Press onto bottom of ungreased 13x9-inch baking pan. Bake for 15 to 20 minutes or until edges are lightly browned. {I used an 11 X 7 glass dish}

Meanwhile, combine all filling ingredients in same bowl. Beat at low speed, scraping bowl often, until well mixed. Pour over hot, partially baked crust. Continue baking for 25 to 30 minutes or until toothpick inserted in center comes out clean. Cool completely; cut into bars.

Place stencil onto individual bars; sprinkle with powdered sugar, if desired.

Red Pepper Hummus

1, 15oz can of chick peas (Garbonzo beans), drained and rinsed
1/2 cup tahini (our store had it in the Kosher section-it's raosted sesame seeds pureed in oil)
1/4 cup lemon juice
2 TBSP vegetable oil
2 cloves crushed garlic
1 small red pepper cut and lightly sauteed.

Place chick peas, tahini, lemon juice and oil in food processor (or blender) and puree. Add crushed garlic and red pepper; puree until desired consistancy.


I've made this twice in the last week and it goes super fast!

Mmmm, you guys are making me hungry! Here's today's recipe....

Gingerbread’s Favorite Brownies

One night several years ago, I was craving something sweet with every fiber of my being. I didn’t have any quick mixes and after staring into my pantry for several minutes decided if I was to appease this monstrous urge I’d have to whip it up from scratch. After flipping few some cookbooks and making a few tweaks I created brownies. It was the first time I’d made brownies from scratch and I’ll never go back again. Try it, they are SO easy and SO scrumptious you may never buy box mix again!

12 tbsp cocoa powder
3 tbsp + 3/4C melted butter
2C sugar
3 eggs
1 tsp vanilla extract
1C all-purpose flour
1C chopped walnuts (optional, but worth it)

Preheat oven to 350. These brownies are ooey, gooey and can be hard to get out of the pan with out proper prep. Line a 13x9 inch pan with aluminum foil and grease it well and you’ll be fine. Mix cocoa powder with melted butter until nice and smooth. Stir in sugar, eggs and vanilla. Gradually add in flour, mix well. Fold in nuts. Spread into prepared pan and bake about 30 minutes or until a toothpick inserted near the middle comes out fairly clean but be sure not to over bake. Let brownies cool, invert and peel off foil. You can then cut them or put back in pan.
Enjoy and make sure you have some milk!

Spam... isn't that a food too? (well, if you can call it that.) So a recipe thread is one place where spam/Spam is.... *good*! LOL!

I'm copying all these and putting them into a file; then I'll convert it to a pdf and make it available somehow (as an attached file to those who want it or some such). Is that okay to do? Maybe someone with a more artistic bent than I can create some pretty MLPTP cover art for it.
