Gluten free baking?

Way back in the day I was a decent baker - my favorite thing to make was cupcakes because they look so fun. I couldn't eat run of the mill store bought cake, because it tasted gross compared to homemade- and even then, I'm not big on cake, or bread. Which turned out to be a good thing! I've been Gluten free for a long time now. I also limit sugar, so unless it's good chocolate my sweet tooth is pretty much non-existent.

But, guess what I just got? A friend gave me a precious pony cake pan! I'd like to make some kind of cake with it -eventually. But there are so many different recipes, and I'd hate to buy ingredients, and try something that turns out terribly. Anyone familiar with GF baking? any suggestions?

I can call my mother and ask her she went to culinary school and I'm pretty sure she did some GF stuff as part of her cooking skills.

I'm not overly familiar,but is there anything specific you're looking for to make? I can ask her what she thinks about ingredients to use

ETA: Sometimes it is all about trying something until you find one you like best

I normally work this way. I'm really not big on desserts though, and I'm a little cheap . some of the baking subs are so expensive, and there are so many different kinds of substitutions I figure I would ask around first, as to what is good. I'd hate to spend the cash on something that doesn't work, and most likely I wouldn't use in anything else. I hear dryness and having a crumbly mess is an issue with a lot of the GF products on the market. (it is the gluten that gives the bread products that fluffyness and holds them together.)

I used to love brownies. wasn't a cake fan but I always thought a nice dense brownie was great. I know GF would have a different texture to cake anyway! So anything nice and chocolaty should work.
