As requested here are some of the fun treats I've been baking up lately. Now, I am not a person who takes pictures of food. I'm too busy diggin' in and eating to plate and pose my food so no Pinterest worthy pics here, sorry!

Saturday to enjoy with the Kentucky Derby (which by the way I have been to Churchill Downs) I made pimento cheese tea sandwiches, benedictine spread on melba toasts, red skin potato salad and mint julep cupcakes! A vanilla cupcake with fresh-from-my-garden mint and a bourbon soak, topped with a cream cheese frosting.

Then Sunday was International Harry Potter day so I made 2 recipes from my HP cookbook. Had to keep it simple cause I was busy pet sitting and doing yardwork but I managed to watch the first 2 movies and whip up some sausage rolls and pumpkin pasties :)

May the 4th be with you today!!! I was working too late to cook when I got home today, so yesterday I made Jawa cookies and a Sarlacc mac n' cheese. The Sarlacc looked better yesterday but I didn't take any pics. I wasn't too happy with how he came out so I think I'll stick with my mashed potato covered meatloaf Wampa arm in the future. I tried to make the string cheese look like tentacles and had broken crackers for the teeth but they got soggy over night. I am an original Star Wars girl so I prefer my Sarlacc without the CG mouth added later, so no mouth LOL I also ran out of yellow M&Ms so we have a couple angry Jawas ;)

And tomorrow is Cinco de Mayo! You may wonder if I have anything up my sleeve but I can tell you the answer is no. This pony has to work late so I'm taking a break from cooking and just picking up to-go sopes and a margarita on my way home from my favorite Mexican place.

Gotta big Mother's Day brunch menu to prepare this weekend for my family so thank goodness for leftovers this week! I'll be marathon cooking Sat and Sun morning!
 
Well, to be honest one of my goals for this year was to celebrate more things. After 2020 being such a dud of a year, I thought I needed more fun things in my life. So I started looking for extra holidays. Although I have to admit I may have gone too far, we may be having a semi-annual mini Thanksgiving week after next :unsure: :lolpony:

My feet hurt! I've been getting ready for Mother's Day brunch. After working all day, I came home and made my famous cheesy grits, cheddar broccoli quiche, egg casserole, big batch of bacon, sausage balls, fruit dip, pimento cheese and a cheesecake. I'm gonna be so busy running errands, setting up and cleaning my patio to cook tomorrow so I made the things I knew would reheat well. Now I will just have to do biscuits and beignets Sunday morning. I'm already ready for a mimosa LOL

Some of you ponies may recall my spice cabinet conundrum. What's a pony with a small spice cabinet and like, 120 spices to do when she needs the turmeric all the way in the back :rolleyespony: I swear every time I opened the door it was like a McCormick avalanche! Well, hubby talked me into splurging on myself and I ordered these. They are heaven on ball bearings, they roll out so smoothly and I am one happy baker. I can find the nutmeg faster than you can say Rainbow Dash! Which is good, cause things are happening this weekend....stay tuned....

I’m really liking the organization of the spice rack. That’s pretty cool.
 
We may be experiencing a heat wave across the county but here in Gingerbread's kitchen we're pretending it's a crisp fall day!

So, I'm gonna let ya'll in on a not-so-big secret, I am a holiday nut. For several years a friend and I have done a little Christmas in July get together but this year I decided to step it up a notch. What comes before Christmas?! Thanksgiving, of course!
So I did a semi-annual-mini-Thanksgiving this weekend :happyTG:

How does one get in the mood for this? Well we turn the AC down a couple notches, pull out Betty White (my mixer) and light a fall scented candle LOL one of my friends even sent me a Thanksgiving card :D

I even put some leaf window clings around so I could watch the leaves falling while I cooked LOL So what was on the menu?

We had a pumpkin coffee cake for breakfast, then I made a turkey breast, corn pudding, roasted potatoes, cranberry relish, @OctoberMoon yam patties, rosemary and chevre muffins and my piece de resistance, sweet potato pie, marshmallow filled cupcakes :)

Had a couple family and friends come and we watched Charlie Brown Thanksgiving :turkey:

So happy semi-annual-mini-Thanksgiving ya'll! So thankful for my TP peeps all year long!

Oh I wish I could have been there. It looks so yummy!! That's such a great idea to have a get together like that.
