Gingerbread's kitchen

House still isn't in order from the flood :hmph: going a little crazy. But I can still use everything, I just don't have plans on hosting anytime soon. My other lil' bros B-day was right before Easter, as I've mentioned I always make them B-day cakes. This brother wanted a funfetti cake with white frosting and a "storm cloud with a lightening bolt, like the emoji" his middle name is Storm so it's somewhat appropriate.

Anywho, thanks to @darklys perfectly timed swap box I was in a good mood and baked up a beautiful cake. No box mixes in this house! I frosted with a nice buttercream and then made some fondant for the cloud and lightening bolt. I did some colored gray and some left white and kneaded them together to get a more interesting gray cloud look. I did put some gold sprinkles on the lightening cause I need glitter. Then I thought it would be neat to give it some 3-D cloud affect with bits of cotton candy torn and placed around the edge and on the cloud. As I've said, I'm not a great decorator and I don't like doing it but I think it came out alright.

Easter was very different this year. This was the first time in like 15 years I did not host. With my house in its current state and I was running back and forth pet sitting all weekend for a friend, along with other craziness I just decided to give myself a break. I said I would make a ham and just a couple things and anyone was welcome to come get a plate but we were not doing the usual sit down dinner. I've been so tired from work and it was too early in April for me to feel excited about it. All I really wanted was a little ham and my baked pineapple and I'd have been content. But of course I made more. No where near my usual spread but here is what we had;

I didn't get it all pictured but I made a ham, my baked pineapple :happyhearts: , mac n' cheese, homemade pumpernickel with blueberry butter, and not pictured was sweet potato casserole, deviled eggs and a cheeseball with crackers. Then we had these "cheat" cookies, the bunnies are just dipped and decorated nutter butters and the toll house break and bake. Not as good as homemade but I'm a sucker for trying all the seasonally marketed things. All ya gotta do is throw appropriate colored candy on it and put it in a holiday box and I'll buy it LOL

but I couldn't not make a real dessert. First was a new recipe, donut pie. Basically, you rip up KrispyKreme donuts add some filling and bake what is very similar to bread pudding in a pie shell. I liked it, liked it even more with ReddiWhip ;) and then I made a vegan snickerdoodle cake with caramel sauce for my other lil bro just so that he'd have a treat since I wasn't doing the usual cooking. I gotta say, that turned out much better than I expected and will definitely be a keeper too.

Next will be mother's day. I'm praying for good weather so we can do that outside if my house is still in disarray. My mom has already been hinting that brunch at my house is her and my grandma's favorite thing and they so look forward to it :rolleyes: I don't think I'll be able to weasel my way out of it LOL

I'm sorry your house is still waiting on fixes, but you seem to be making the best of it! I love the cotton candy clouds idea! And I'm a fan of pineapple and ham (hawaiian pizza is my fave!) so your spread has me drooling...
Don't overwork yourself so cooking and baking stays fun for you! You're doing awesome!
 
Donut pie sounds like a carb bomb! Those bunnies are so cute
