The recent 'Getting Healthy' thread prompted me to post a thread for gluten-free members to share recipes, discuss products, and anything else relating to the gluten-free lifestyle. Non-gluten-free members are welcome to ask questions as well.

Neither I or immediate family members have celiac, but I do have irritable bowel syndrome that appears to be triggered by gluten. I can eat anything else, but just a small amount of gluten and I'm bloated shortly after.

What are your favorite gluten-free products? Glutino has a nice selection, but the prices can be high depending on the store.

I've been GFCF for 7 years now. My body has an auto-immune response whenever I consume gluten or cow milk. Hodgson's Mill has great GF products that are on the cheaper side. They also have a rebate program. I have a whole document I put together of recipes, flour blends, and shopping tips I can send to anybody if they are just starting out. Otherwise, I'm gonna post the recipes here. Thanks for starting this Hobomom and Mimic! Here's my first recipe post:

Popovers

  • 4 large eggs

  • 3 tbsp melted butter

  • 1 ¼ cup lukewarm milk

  • 1 cup multi-purpose GF flour

  • ¼ xanthum gum

  • ½ tsp salt

  • 2 mixing bowls

  • 1 greased 12 -cup muffin or popover pan

  1. Preheat oven to 400 degrees F

  2. Grease the muffin or popover pan

  3. Whisk together eggs, milk, and butter

  4. In a separate bowl, whisk flour, xanthum gum, and salt

  5. Gradually sift and whisk together all ingredients until smooth

  6. Pour batter into the greased cups about 2/3 full

  7. Bake for 25 min, then reduce oven to 350 degrees F and bake for an additional 15 min or until popovers are deep brown

  8. Remove from the oven and let firm for 5 min and then serve immediately with jam or syrup

Prep time: 10 min Serves: 12

There was some really amazing gluten free bread at costco several months ago, and I've been stalking their bread section ever since, but items just come and go at costco unfortunately....

As for recipes, I really suck at gluten free cooking. But I'll hit my mom up. she makes an amazing gluten free pizza thing using cauliflower crust!
