I did myself in yesterday! I'm usually much more prepared but this whole year I've been off my game and this holiday is no different. I was late planning my menus, shopping, preparing, everything! And why I do so much, I don't know. Normal people I think make like, 1 or 2 holiday treats. I wonder what that's like, I need to try that one year LOL
So in all the busyness and inbetween work, my time to bake and cook have been limited. I told myself Sunday I would do all the treats. And I did, and it took 14 hours... what is wrong with me so here is what I did in the kitchen yesterday...
made 3 banana puddings for each of my work offices, made my homemade sauce and meatballs to freeze for Italian christmas that we're doing Saturday, made and canned a dozen jars of pepper jelly, made pistachio shortbread cookies, spritz cookies, fruitcake cookies, peanut butter balls, vegan peanut butter balls, oreo truffles, vegan oreo truffles, sugar plum candies, white trash, mini cheesecake tarts and a rum cake. And I'm probably forgetting something else but at some point I probably blacked out, as apparent by a quarter size burn I found on my forearm this morning that I have no recollection of receiving. Gingerbread was in the ZONE deep.
I wish I could say that was all and I'm done but nay, nay, I have a party Friday so I will be making party appetizer foods, and a pistachio amaretto cheesecake.
AND THEN, for Italian Christmas Saturday I will make a Zuccotto and then I have the sauce and meatballs already done from yesterday in the freezer, thank goodness.
AND THEN, for Christmas Eve I just have to make corn bread and spoonbread to take to a family get together but then I'll prep for Christmas day,
CAUSE THEN, for Christmas Day I'll have everyone over for breakfast and will make biscuits and gravy, a egg potato casserole thing, cheesy grits, fruit pizza, a vegan breakfast casserole and maybe a vegan coffee cake, and probably some other stuff I've forgotten about. For dinner we always order Chinese take out cause by that point I'm hanging on by a thread but since I just can't help myself I'll be making a pudding for dessert, and not like, Jello instant pudding, nay, nay, English pudding. Basically a moist cake that simmers on the stove all day. Yep, that kind.
All while working full time and trying to have some fun
Sheesh, every year I say I'm going to be more prepared and cut back next year but this time I mean it!!!!
