Got Casseroles?

Anybody got some good casseroles that I would like to try?

The ones I have tried:
Green Bean Casserole
Hominy Casserole
Broccoli Cheese Casserole
Do Funeral Potatoes count as casserole?

I would like to broaden my horizons!

Note: I'll try most anything but fish or Seafood!

Can't go wrong with Corn Casserole. You can substitute white corn if you can't find the regular cans of shoepeg. You can also throw all of the ingredients in slow cooker for a few hours on high, stir occasionally, and add the shredded cheese on top like 30 mins before you serve. Guaranteed party hit. ;)

Ive never heard of shoepeg corn! or white corn lol - will have to look better on the shelves!
 
My mom makes really good potato casseroles. We call them that, idk what they're actually called.

Throw the following things in a casserole dish (in layers):
-Sliced and cooked potatoes
-Cooked and sliced sausages (preferably smoky ones, you can also substitute with smoky tofu)
-Hard boiled and sliced eggs
-(Opnional) sliced and sautéd mushrooms (canned is perfectly fine)
-A TON of sourcream (this should be the top layer, but there should be more than one layer of it, otherwise it might be a bit dry)
-Season as you want to (I usually put a TON of garlic, my mom has her own seasoning mix she puts in everything she makes)
Bake until the top of the sourcream browns a bit.

the eggs are hard boiled? - just to make sure lol cause my brain said scrambled first

It's seems harder to find every year. The white is usually in stock tho. It'd probably be fine with regular corn. I'm curious now if it'd be good with hominy
ive switched a few recipes with corn for hominey cause shark does not like corn and they turn out good! i say its worth a try!
 
Obsidianleaf got sent a delicious recipe by tulagirl for a frito casserole in a recipe swap. Hold on, I'll be back soon.

ETA: Here it is. Isn't that card adorable? We like to add green onion in it, and a dollop of sour cream on top.

So basic I don't know why I bother with the card but drain and dump can of corn into 9x13, brown a lb of ground beef and garlic til cooked through, drain and spread over corn. Spread mashed potatoes overtop beef and corn and then sprinkle lightly with some Italian bread crumbs over top. Mine never comes out as good as Nan's but that's probably cause she used so much salt LOL it's basic and plain but it's comforting.

I like to serve this over something, like mashed potato, egg noodles, rice or even biscuits
