We've been seeing some recipes pop up, and I thought it would be fun to share some of our favourites with each other! It also might help be get out of a very uncreative cooking funk. My family will thank you greatly! LOL!

Here's a great one my little sister Amy sent me. I really like this casserole, it's quick to make AND I don't have to type it! Win/Win/Win!

Cheesy crescent roll casserole
Makes 4 to 6 servings

Ingredients
  • 1 1/2 pounds lean ground beef
  • 1 red onion, diced
  • 1-16 ounce can crushed tomatoes
  • Salt and pepper to taste
  • 2 cups shredded cheddar cheese
  • 2 cups shredded Monterey jack cheese
  • 6 unbaked refrigerated crescent dinner rolls
  • 1/4 cup sour cream
Directions
  1. Preheat oven to 375 degrees F.
  2. Saute the beef in a large flame proof casserole dish with the onion until beef is browned. Mix in the tomatoes and season to taste with salt and pepper. Cook beef stirring often for about 20 minutes or until the liquid evaporates.
  3. Combine the cheeses and sprinkle over casserole. Flatten the dinner rolls and spread the sour cream on one side. Arrange rolls, sour cream side up, on top of the cheese. Bake casserole 30 to 35 minutes or until bubbly.

I got tons of GFCF recipes if anybody needs those! Here's the salsa I'm making to take to a party today:

Salsa Verde


  • 5-7 large tomatillos

  • 2 ½ cloves of garlic

  • ¼ cup onion

  • cilantro to taste

  • 3-4 chiles de arbol (spicy)

  • 1 lime

  • small saucepan

  • blender or large mortar and pestle

  1. Remove the husks from the tomatillos and wash well (will be sticky)

  2. Wash all vegetables and chop up into blender size pieces

  3. Add vegetables to the blender and roughly blend

  4. Squeeze the entire lime worth of juice into the blender, adding pulp if desired

  5. Add in cilantro and blend well

  6. Salsa may be served raw at this point, but is traditionally cooked

  7. If cooked salsa is desired, simmer mixture in a saucepan until the salsa turns a duller and darker shade of green. Stir until a consistent new shade of green.

  8. Cool and serve (El Milagro chips are great to eat it with)
 
mmmmmmm Salsa!! I could eat it with a fork or spoon and I do a lot! hehe

A few years ago we did a recipe swap here on the TP and I still use a lot of those recipes!1 But this one is my favorite. It came from Kar Red Rose.

Sesame Noodles
1 lb. Cooked Linguine tossed with 2 Tsp Sesame Oil

2 Tbsp. Olive Oil
2 cloves minced Garlic
2/3 Cup Chunky Peanut Butter
1 Cup Broth (veg. or chicken)
1 Cup Shredded Zucchini
1/3 Cup Soy Sauce
1 1/2 Tsp. Sugar

In a skillet, heat olive oil; add garlic and cook for 1 minute. Add peanut butter; mix well. Stir in broth, zucchini, soy sauce and sugar. Bring to boil; remove from heat. Add sauce to noodles and serve. She also recommended adding 1 Cup Cooked chicken.

I've modified it a bit my self over the years as well. I use creamy PB, chicken, and any other veggies that I have around that sound good like celery and onions (added before the garlic to crisp up) I add the noodles to the sauce before it's done cooking to really get the flavors together and have even forgone the noodles and used just the sauce on various stir-fried meat, veggies and rice.
 
Yes, Gingerbread's annual recipe exchange will be coming up after the holidays. Until then, do you longtime members remember the Daily Recipe thread I did, gained a lot of weight with that one. Can't seem to find it though, may have not made the move.
 
Quiche
1 9 inch deep dish pie crust
1 tbsp. butter
½ cup chopped onion
1 ½ cup swiss cheese, divided
1 tbsp flour
4 eggs
1 cup heavy whipping cream
1/8 tsp salt
1/8 tsp pepper
1/8 tsp
1 cp crumbled bacon
Bake pie crust at 425 f 6-8 min reduce oven temp to 350 f . in small skillet saute onion in butter until softened 3-4 min;cool slightly.
Toss shredded cheese with flour . In mixing bowl beat eggs, cream, salt, pepper, nutmeg. Stir in ¾ crumbled bacon, onion and ½ cup cheese. Place 1 cp cheese in bottom of pie crust. Pour egg mixture over cheese, sprinkle with remaining bacon. Bake 350 for 45 minutes

Before we moved we cleared out alot of old threads, certain forums we kept it all, such as discussion etc, Jewel may have a copy of that thread at some stage though :)

I love cooking so I hope people will enjoy this!
****** Mac n Cheese (Sorry for the odd name. I have a lot of ****** friends and as the house mom I have to cook for everyone. They devour this stuff right up so I named it in their honor :lolpony:)

8 cups of noodles. Preferably wacky shaped noodles or brightly colored veggie noodles.
1 Block of warm cream cheese.
1 Jar of Tostitos cheese dip (It can be plain or spicy depending on your taste preference)
4 cups of your favorite shredded cheese. I prefer mozzarella as it makes it extra gooey.
1 stick of melted butter
1 Tablespoon of salt
1 Teaspoon of mustard

Topping -

5 slices of white bread
Lots of parmesan
1/4 stick of melted butter
As much bacon bits as your heart desires (or none at all if you're vegan/vegetarian)

1. Boil up the noodles in a huge pot.

2. Drain the noodles and set the pot off the stove.

3. Preheat the oven to 350

4. Dump in all the ingredients over the noodles and mix it all up.

5. Transfer the contents of the pot to a well buttered backing pan. It can be metal or glass.

6. Toast the bread and then crumble it up in a bowl.

7. Add the melted butter, parmesan, and bacon bits and mix it all up.

8. Smosh the buttery cheesy bacony bread bits over the mac and cheese.

9. Pop it in the oven for about 10 minutes

10. Dig in! I promise this will put a smile on your face and some meat on your bones :lolpony:
 
@Moondream that mac n cheese sounds ridiculously good, omg. but my first thought when i heard "****** mac n cheese" is totally that you found some way to making mac n cheese with... a special ingredient. :rolleyes:

Ooh, recipe thread! I gotta see if I can get some Portuguese dishes to share here! Plus it'll be a fun learning experience translating them. :satisfied: Would anyone be interested?
 
Yes! I would love to try some Portuguese recipes! My hubby's grandma was Portuguese.

That sounds like a fantastic idea! Recipes from your own country and culture! I'm sure that even I can find a few South African favourites to post. Should we make a new thread for that and add pictures, and leave this one for more general recipes?

Hey if you used a special kind of butter I'm sure it would work out :winkpony: Joking joking :lolpony:

I'm a poor college kid so ramen is my best friend. I love eating Asian food but I can't afford going out so here's a tasty knock off that is sure to satisfy.

1 Pack of block ramen
1 spoonful of peanut butter (you can use the honey kind if you'd like)
2 spoonfuls of light or regular ginger and sesame dressing

1. Boil the ramen
2. Discard or set aside the flavor packet that came with it. (You can use it in other recipies. It works great as a substitute for chicken bullion!)
3. Drain the ramen when cooked and put it in a bowl
4. In a seperate bowl mix the peanut butter and dressing
5. Microwave for about a minute then mix it up
6. Dump the sauce over the noodles and stir it all up.

Now you have poor mans Pad Thai :satisfied: You can also add chopped up chicken, snow pea pods, chopped up green onions, or cooked broccoli to dress it up.


Oh heck yeah I'd love to try recipes from other cultures!! I'm an all American white mutt so I really don't have any cultural foods of my own..well unless you count Florida keylime pie :lolpony:
