Hey guys! Its that time where the weather starts getting colder and soup is a wonderful idea!
(though I like soup any time of the year lol)

Do you have a favorite soup recipe?

My mom's potato soup, which after much discussions we figured out it's just the WW potato soup lol.

There's a lot of different versions but this is the bare bones version.

Weight Watchers Potato Soup


  • 1 bag frozen hash browns (pepper and onion flavor – Ore-ida Potatoes O’Brien)
  • 2 cans fat free chicken broth
  • 1 pkg Pioneer Fat Free country gravy mix

Simmer potatoes and chicken broth 10 minutes. Mix gravy with 1 cup cold water, add to potatoes and cook until thick.


You can also mix the gravy with the chicken broth and pour into crock pot with hash brown potatoes and heat on low for a few hours while you are out of the house.

We usually saute 1/2 onion in the pot at the beginning and then set up a toppings bar so people can customize. Bacon bits, shredded cheese, sour cream, chives/green onion, etc.

this sounds super easy! been looking for a simple potato soup! ty!
 
Zuppa Toscana hands down my (and my family’s) favourite soup and your family would love it too. It’s super easy to make and tasty and freezes great.

I recommend as a time save to purchase fresh kale that comes in the bags. Then you don’t have to remove the stems and cut. Don’t get frozen kale, it basically dissolves in the soup.

We are also big fans of German Potato soup with debraziner sausages. It’s so so so so good and also freezes very well.

It should be Kale and not Spinach. ;p Kale is a heartier green that is able to stand up to the temperature of the soup. Spinach tends to get mushy, Olive Garden uses kale not spinach. ;) it adds texture the taste isn’t really there because the soup overpowers the “kale taste.”

Np! If I find her stew recipe I'll add that too cause it was my favorite and I had to beg her to make it for me lol.

So many of her dishes were ones she tinkered with but never wrote down. I can make the same recipe but it's never quite the same. :sadpony:

Ah! Finally my moment to shine! I hate cooking but soup I can handle! My mom made Pepperoni Tortellini Soup for me growing up and it’s the one recipe I’ve really mastered. Super easy, super fast (15 mins if you use frozen tortellini, closer to 30 if you use dry).

Pepperoni Tortellini Soup
8 cups chicken broth
1 oz (or whole bag) mini pepperonis
1 tsp minced garlic
2-14 oz cans of diced tomatoes
1 bag frozen tortellini (10-12 oz)
1 TBSP basil

Bring broth and garlic to a boil, add tortellini and cook til done. Add pepperoni, basil and canned tomatoes and stir through til warm. Optional: top with Parmesan cheese

It’s my favorite go to recipe.

One of my favorites is Taco soup! With sour cream, crushed corn chips, and cheese! I dont have an exact recipe bc we usually eyeball it but ill look if i see one online similar! :D
Yes! We make taco soup all the time! Its one of my faves too!
 
Man, y'all making me feel basic; I get premade soups at the grocery store :lolpony: I don't know anyone who makes their own soup! :cry:feel like I'm missing out, I live off storebought soup this time of year
